The Culinary Arts program at Mitchell Technical Institute (MTI) includes a 6-week summer session, 2 full semesters and a 12-week externship. Students receive classroom time and learn culinary skills in the cafeteria kitchen, short order kitchen, and formal dining room. In 2000, the Culinary Academy of South Dakota was created as a division MTI's program to provide culinary apprenticeship training throughout the state. The program is delivered using partnership sites, distance learning, and mixed mode classes. Curriculum is from the National Restaurant Association and the program is endorsed by the South Dakota Chapters of the American Culinary Federation.
