Cosmopolitan Dallas no longer shows much trace of the wind-swept prairie land that was founded as a stage stop and trading post by Arkansas native Joe Dallas in 1841. Historically known for hearty barbecue and steakhouse faire, Dallas is regarded today as a sprawling, lively city that enjoys itself with a celebrated international cuisine.
